Ingredients:
– 300 g flour
– 6 eggs
– a cup of olive oil
– 400 g sugar for the icing
Beat 5 eggs in a bowl and slowly add the flour and oil. Mix thoroughly to obtain a smooth dough, then add the other egg. Flour your hands and roll the dough into long thin strips, then cut it into small pieces or simply shape it into small balls. Place the pieces on a floured baking-sheet (wide apart) and bake in a moderate oven until the sweets are done. In the meantime, prepare the icing. Pour a glass of water into a pan, add sugar and grated lemon rind. Cook until the icing is thick. Dip the biscuits into the icing and turn them quickly so they absorb the sugar. Put the sweets on a cold, non-stick surface to cool. These biscuits keep for a long time.
